Here’s how simple this is. Grab a pound of pre-shaved beef — ribeye if you can find it (my store even had Wagyu), and yes, it’s usually sitting right there in the meat section, no butcher counter required. Dice up half a large sweet onion and sauté it in a tablespoon of olive oil over medium heat until it’s soft and just starting to turn golden, about 4 minutes. Pull it out of the pan and set it aside.

Add two cloves of diced garlic to the pan and cook for about 30 seconds. Then the beef goes in. Break the slices apart in the pan so they cook fast and even — this is the whole point of shaved beef, it’s so thin it goes from raw to done in about 3 minutes. Add a teaspoon of Worcestershire sauce, salt, and pepper, (I like a little garlic powder too) and cook it until there’s no pink left. Don’t walk away and don’t overcook it — thin meat turns to shoe leather fast if you get greedy with the time.

Now we get to the only question that actually matters: Whiz or provolone? The honest answer is you don’t have to choose. Split your hoagie rolls, lay provolone slices down the length of each one, and run them under the broiler until the cheese melts. Then stir the sautéed onions and a few spoonfuls of Cheez Whiz right into the pan with the beef until it’s all one gooey, glossy mixture. Pile that onto the provolone-lined rolls and you’ve officially made a double-cheese cheesesteak, which is not a compromise, it’s an upgrade. Now if I’m being honest, it’s provolone only for me. But you do you.

My honest take: the shaved beef is the whole trick here, and it’s the reason this works as a weeknight dinner and not just a weekend project. No marinating, no slicing your own ribeye paper-thin with a half-frozen knife fight in your kitchen. You’re eating in under 20 minutes, and the meat stays tender instead of chewy because it barely touches the heat before it’s done.

If you want to go off-menu from the off-menu recipe, sauté some mushrooms or bell peppers along with the onions, or spoon on a little pizza sauce for a Pizza Steak variation. Just don’t tell anyone from Philly you did that. Some debates aren’t worth having twice.
