It seems like many moon ago, but at one time while living in NY my wife Michelle and I had our favorite Chinese restaurant. And, along with other things, this place had the absolute best fried dumplings I’ve ever tasted. Since moving from there, I’ve tried endless times to find one that even comes remotely close. Little did I know that with the help of Pinterest, I would find and modify a recipe that would come so darn close it’s not even funny. So the next time the weather is a bit gloomy and you have a couple hours to spare, give this a shot. Good news is that they are freezable, so you can already have them premade for later. Potstickers
Ingredients:
- 2 packages wonton wrappers
- 1 pound ground pork
- 1 teaspoon ground fresh ginger
- 1 can water chestnuts finely diced
- 3 green onions
- 1 clove garlic
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Pinch of sugar
- salt and pepper to taste
- 1 egg
- 1 tablespoon cornstarch
Instructions:
Mix all ingredients (except for wonton wrappers – duh) in a mixing bowl. Place one teaspoon of the mix in the center of each wonton wrapper. Fold over the wrapper and seal using water. Once all dumplings have been assembled. Set a pot of water to boil. Once a rolling boil is achieved drop in some of the dumplings. Allow to cook for 5 minutes. This cooks the meat mixture inside. Cook all of the remaining dumplings this way and set them on a pan as they are removed. Once all dumplings have been boiled, heat a pan with about 2 tablespoons of oil. Begin frying dumplings on one side only until golden brown. Remove from the pan. Serve with dumpling sauce or sweet chili sauce.
